Food, Food, Food to Create!

You will want to shop at an authentic Middle Eastern grocery for your spices and semolina. They will be happy to assist you in your choices. If unavailable, most large super markets in metro areas carry the items in this recipe!

Couscous

You can make Couscous with either meats or vegetarian style. Both are wonderful! Using a good double boiler, makes this dish easy and ready in about 1 hour.

1 handful per person

Semolina

4 pieces per person cubed

Chicken, Beef, Lamb, or Favorite Vegetables

1 chopped

Red Onion

2 small sliced

Zucchini or Yellow Squash

1/2 head chopped

Cauliflower

1 chopped

Rutabaga

1/2 cubed, peeled

Eggplant (if desired)

1/2 bunch chopped fresh

Parsley

1 can

Garbanza's (Chic Peas)

pinch

Cumin

1/2 tsp.

Turmeric

3/4 tsp. (full)

Fresh Ground Black Pepper

pinch

Coriander

pinch

Saffron (if desired)

1 Cup

Olive Oil

As Desired

Curry Powder

pinch

Paprika

As Desired

Salt


Preparation of Meats & Vegetables

Heat oil in bottom of double boiler. Put meat & onion in the pot. Add spices and stir. Cook over low heat 15-20 minutes.

Add 5 cups of water to cover meat and onions. Cook until boiling. Add cut vegetables and more water if needed. Reduce heat to simmering (medium high).

Preparation of Semolina

In a large bowl, mix semolina (1 handful per serving) with 1 cup of water. Put in top of double boiler. Leave uncovered.

Place top of double boiler on bottom of double boiler. Tie twine around center of double boiler where pans meet to keep seal.

Cook together 1/2 hour. Take semolina off and pour back in bowl. Add 2 Cups water and mix with wooden spoon. "Let semolina drink" the water. Pour back into top of double boiler. Cook for 15 minutes.

Mix a pinch of cumin, ground black pepper, 1 Tbs. butter in bowl. Add to semolina. Cook for 15 minutes.

Spoon semolina onto plates. Ladle meat & vegetables on top of semolina! Serve with Pitta Bread! And watch the smiles!

Salad Takhchi
Serves Four

5 peeled & diced

Roma Tomatoes

1/2  diced

White Sweet Onion

1/2 diced

Green Pepper

1 Cup

Cooked Small Shrimp

1 sliced

Avocado

1/4 tsp.

Fresh Ground Pepper

1/2 tsp.

Ground Cumin

As Desired

Salt

1 Tbs.

Olive Oil

1 tsp.

Vinegar


Mix all ingredients gently together and serve. Delicious!
